4 Skinless Boneless Chicken Breasts, halved
1 can 14 1/2 oz. chicken broth
1/2 C, Orange Juice
1 medium onion chopped
1 C. uncooked long grain white rice
3 T. parsley
Orange Slices for Garnish.
In a non-stick skillet, over medium high heat; cook chicken 10 minutes or until browned. Set chicken aside.
Stir in the broth, orange juice and onion. Heat to a boil. Stir in the rice. Cover and cook over low heat 10 minutes. Return chicken to pan; cover and cook for 10 minutes or until rice is done.
Remove chicken to platter; stir parsley into rice mixture. Ganish with orange slices. Serves 4.
