PINEAPPLE NUT COOKIES
1 C shortening
1C sugar
1C light brown sugar
2 eggs
1C drained crushed pineapple
4C flour
3 level tsp. baking powder
½ tsp. baking soda
1C chopped walnuts
2 tsp. vanilla
Mix all together until combined. Drop by teaspoon onto greased ( or use parchment paper) cookie sheets. Bake at 350 degrees for 10 – 12 minutes or until light golden brown. Cool on cooling racks then store in airtight containers.
